I usually spread a layer of Apricot Jam between the 2 halves.
1 whole egg
5ml vanilla essence
Fine white icing sugar
Mix egg & vanilla. Add icing sugar a little at a time, mixing well using
a palette knife.
Keep on adding the sugar until mixture becomes less runny.
As soon as a blob of the mixture no longer drops off the knife,
it should be ready to spread on the cake.
This frosting dries pretty quickly, & is delicious!
